Guide to make a perfect “Phin” Weasel Coffee

Vietnamese “Phin” filter is the most popular tool to make coffee but in fact, they are not easy to master at all, especially in making a weasel coffee cup.
Measuring:

20 grams of ground Weasel Coffee is a good start to make a cup of Weasel Coffee. With 20g, your ground coffee will be 12 to 15 milimeters tall in the chamber and be extracted in 3 to 4 minutes, the longer it takes, the stronger body is.

Steam the coffee

Steam is an important step to extract the unique flavor of Weasel Coffee. It may take 5 to 10 minutes to complete this step, just wait until your coffee raise and lift the holder up. If you don’t have steamer, you can heat up the PHIN filter first with 15ml of boiling water.

Boiling water is needed to extract the essential oil in the coffee. The coffee will have reddish brown color and clear.

Filter the coffee
Put the filter paper at the bottom of Phin filter, pour in coffee to filter out dust and subside. After that, adjust sugar until you feel ok.
Weasel Coffee is served best when hot. Only when it gets cool down, sugar is needed. You can also serve with milk but be careful because too much milk will overtake the Weasel Coffee flavor.
